Veritas Whiskey & Wine, an American fusion restaurant and bar, is making plans to open later this year in Overland Park at the Prairiefire shopping center.
As the name suggests, Veritas plans to offer an extensive drinks menu but will also have a variety of seafood dishes, steaks, salads and burgers, among other options.
On the weekends, it plans to serve a tapas-style, small-plate brunch.
Owners Rolfe Loomis and Michael Magner are anticipating a May or June opening, following constructions and renovations that are set to begin in the next few weeks.
Before opening Veritas, Loomis worked as an operating partner at Overland Park’s Cinzetti’s Italian Market Restaurant. He also runs the local catering company Plaza Catering. Before that, he worked as an executive chef.
He said he and Magner have been wanting to open their own restaurant together for some time.
“We’ve been looking at opening a restaurant together for like 20 years,” he said. “I’m really into wine and into upper-end whiskies, and the education on them. Making really great drinks that are cost-effective, but also come with a little bit of education.”
Loomis said the inspiration for the Veritas menu comes from his travels to wine-centric cities in California, like Napa and Paso Robles.
“We want to be that kind of contemporary casual place where you can come have a great custom-made drink and some tapas or a full-end dining experience,” Loomis said. “It’s going to be a really diverse menu, so I think that everyone will want to come back a couple times and try everything.”
Once open, Veritas plans to be open from 3 p.m. to 10 p.m. on Mondays and Tuesdays and from 11 a.m. to 10 p.m., Wednesdays through Fridays.
Weekend hours will be 10 a.m. to 10 p.m. on Saturday and 10 a.m. to 8 p.m. on Sunday.
